A prestigious training venue for over 20 different sports and organisations, it provides a range of superb sporting and non-sporting facilities and services, including catering for weddings and corporate events. We`re looking for an ambitious Chef de Partie to support the Head of Catering and Sous Chef at this spectacular riverside location.Key responsibilities include:- Managing a section within the kitchen with the assistance of Head Chef , Sous Chef or kitchen assistants- Deputising for the head/sous chef at times- Ensuring that dishes are prepared and cooked according to the specific standards- Some supervision of the catering assistants within the kitchen environment, ensuring they are fully trained and understand their duties- Ensuring that stock is rotated and controlled within the specific section of the kitchen- Ensuring the cleaning schedule is adhered to and that cleaning tasks are delegated as appropriate- Ensuring that food is prepared in accordance with Company hygiene procedures, e.g. temperatures are recorded, samples are taken, and foodstuffs are stored safely and hygienically- Ensuring that dishes are produced to required standards of quality and presentation for service.- Monitoring portion and waste control to maintain profit margins- Ensuring full understanding of the functional administration of the kitchen- Maintaining detailed Knowledge of menus and produce dishes to the standards required- Adhering carefully to policies, procedures, standards and guidelines with regards to company policy and health and safetySkills and Experience- Relevant catering qualification or proven track record within a similar post/environment- High level practical catering ability- Previous experience in a Demi or Chef De Partie role, preferably within a formal events or fine dining environment- Experience of event catering and cooking for large volumes- Ability to maintain a good level of understanding of the restaurant and hospitality industry- Collaborative approach to work- Ability to work under pressure and multi-task- High level ability to motivate- Excellent oral and written communication capability- Self-motivated- Smart appearance- Friendly, reliable and confidentWe are offering a competitive package for this role with a range of benefits including free gym membership, discounted rates on food and beverage, as well as discounts at a range of high street retailers and restaurants.In line with Serco Leisure`s policy, employees may be required to have a CRB disclosure at an appropriate level.If you have the essential skills, experience and qualifications to fulfil this role, please apply now and upload a copy of your CV in a word or PDF format.On occasion we receive significantly more applicants than expected for some vacancies and under such circumstances we reserve the right to bring forward the closing date of the advertisement.
